The Low Carb Wagon

I am on the low carb wagon. If you would like to join me, hang on for a bumpy ride. It is not always easy, but, always worth the ride.

I just ordered the book, "Wheat Belly," by Dr. William Davis. I read the reviews on it and was quite impressed. Dr. Davis is a cardiologist who has been doing some testing on his patients. Well, I can't explain since I have not yet read the book. I know there are plenty of cardiologists out there who are still screaming low fat and lots of "healthy" whole grains. My own is one of them. My regular doctor, on the other hand, says low carb is the only way to go.

Whom should I listen to? I shall let my body make that decision for me. I alone know how I feel when I eat a low fat, high carb diet. I want to feel good. I know my body and my food sensitivities better than anyone.

All the hype about "healthy" grains literally makes me sick. I DO mean literally. 100% whole grain bread spikes my blood sugar just like white bread does. I do not want to be Diabetic and intend to listen to my enlightened doctor who recommended the low carb lifestyle as the only way to keep Diabetes at bay.

Einkorn Wheat

I am still reading "Wheat Belly," by William Davis, MD.  It's very interesting how wheat has changed and evolved over the years.  Einkorn wheat is the ancient variety of wheat grown before "modernizing, " (is that a word?) came to be.

Wheat Belly

I had "Wheat Belly, by William Davis, MD. waiting in the wings while I finished reading "Life Without Bread."  I have just begun reading, so will withhold any comments until I have had time to read more.

Life Without Bread

I finished the book, "Life Without bread," by Christian B. Allan, PHD. and Wolfgang Lutz, MD. It was a very enlightening book. I found out that I am already doing almost everything the two doctors recommend. I have been following the low carbohydrate lifestyle for over ten years. They recommend no more than 72 grams per day and divide it into Bread Units. 12 grams=1 Bread Unit. So, no more than 6 Bread Units per day. I do not count min, but I doubt that I eat that many per day.

I have been doing research on wheat and decided to eliminate it from my diet once and for all. Wheat has always been a no-no for me except for the small amounts of 100% whole grain I allowed myself for a sandwich. After reading this book, there will be no more wheat for me. This is not a book review, so I won't go into detail about the story of wheat, except to say...educate yourself on the subject. The wheat today is not the same wheat our ancestors made their bread with.
